Meal prep & food planning – How I do it & how it’s helped my marriage

When people ask how myself and hubby survived our first year of marriage, I often feel bad about the response I give, because I feel like it’s not what they want to hear! Leading up to marriage many couples are warned about the challenges the first year may bring, and told to be patient with one another as they learn to navigate this new journey. Well, that wasn’t the case for us. In fact it was quite the opposite. Don’t get me wrong there were some challenges, we’re only human, but nothing compared to the stories we had heard. One of the main challenges for us, showed itself in the form of cooking, and I’m here to share how we were able to tackle it before it became an even bigger problem.

I entered marriage with the mindset that I was to be a superwoman wife, one who not only did her ‘9-5′, but upon returning home would throw it down with a delicious meal, and then somehow still have the energy to blog and film YouTube videos in the evening.

Who was I kidding?!

This worked for the first three to four months, friends and family were commending me on how plump Lu was looking due to the good food he was eating, and I felt really good about this! BUT, it didn’t last very long. I quickly grew tired and went to bed every evening absolutely drained.

Now, it wasn’t so much the act of cooking that was the problem, but rather two key things that I discuss in more detail in this video:

– Poor monthly food shop prep
– Not planning in advance

So, tired and frustrated, I eventually sat down with Lu, and we brainstormed a way to alleviate the problem. The answer… a monthly food planner.

In celebration of the fact that I’ve since rekindled my love for cooking, and we [yes hubby helps from time to time!] are diligent food planners and meal preppers, I’ve decided to share one of my meal prep sessions with you every month, and hopefully inspire you to give it and food planning a try.

How to make Nigerian Puff Puff [Recipe + Video]

Two weeks ago I posted the photo you can see above on Instagram. I had my older sister around and we spent the afternoon together, cooking, laughing and being silly as usual! We were both craving a little something sweet, so decided to whip up a bowl of Puff Puff. I shared the process on Instagram, and let’s just say the love was real! So many of you asked for my recipe, and I promised you exactly that!

Puff Puff is very easy to make, and is the ultimate definition of delicious! Definitely a winner if you’re hosting guests, but beware this stuff is addictive, and should be consumed with caution!

These oat & banana breakfast pancakes are sooo darn good + healthy! [Recipe]

Exactly a week ago today I took to my Snapchat and Instagram Stories, and shared my absolute favourite breakfast pancakes recipe. I recorded every step of the process, and promised a few of you that I would post a full recipe on the blog.

Well the day has finally come!

These pancakes are my definition of breakfast heaven. Not only are they are delicious, they are quick to make, and unlike your average pancake, these are super duper nutritious. In just one serving there are approximately 14g protein, 14g fiber, and 75g slow releasing carbs [thank you MyFitnessPal for making nutrition tracking so easy!]

Drink your way to longer hair with these 3 highly nutritious smoothies

Two years ago I hosted my very first protective style challenge. I wanted to speed up my hair growth in time for my wedding, and decided to follow through on four things that I believed would help me achieve longer hair.

One of the things I did was drink a smoothie a day. I was well aware of the impact of nutrition on the health of my hair, and decided that taking smoothies was one of the easiest ways for me to get a tonne of vitamins, nutrients and minerals, in just one drink. Two years later smoothies remain an important part of my daily routine, and I do my very best to ensure I take one a day. I’ve gone back and forth with different smoothie recipes but three in particular are always on repeat.
